Cabbage Soup

It’s that type of season where anything goes when it comes to soups! I recently was looking at cabbage soup recipes and found one that peaked my interest. It was a detox and weight loss recipe. I liked the fact it included Apple cider vinaigrette and lemon juice as those have great health benefits!

Of course I made it my own and substituted/added some things. I think I will enjoy this for lunch for the upcoming week as I am focus on fueling my body with more greens and fruit. Hope you enjoy this quick and easy recipe!

Ingredients:

32 oz. of vegetable stock

1/3 onion chopped

1 small head cabbage chopped in large pieces

1/2 cup of shredded carrots

1 tsp. of minced garlic

3 tbsp Apple cider vinegar

1 tbsp lemon juice

1 tbsp. of dried parsley

2 tsp. of tomato paste

Salt and pepper to taste

Put everything in a pot in medium heat and cook cook with top covered for about 20 min. or until Cabbage has soften.

*Note ingredients can be increased/decreased depending on your preference.
