Meatless Baked Mostaccioli

So there I was just thinking of something different to cook for dinner for my household the other night that would be appreciated by 3 picky eaters. Then God dropped it in my spirit to try a meatless Bake Ziti! Well, that changed slightly when I picked up the wrong noodles called Mostaccioli (I am sure I just looked at the noodles, which look similar and kept it moving It’s really the same dish).

I must say I’m proud of this one right here it was so delicious (🙌🏾) !!! Now I’m sure I could have added a few additional things, however this came out just right and everyone loooved it!

Meatless Baked Mostaccioli

2-8 ounce cans of tomato sauce

1-6 ounce can of tomato paste

1 box of Barilla’s Mostaccioli noodles (use all except for 1 1/2 cups dried)

1/3 cup of Kale (I used frozen. I let it sit in hot water and the squeezed excess water out with a fork)

1 tsp. of onion powder or (1/2 an onion 1/2 green peppers is optional)

1 tsp. of garlic powder

1 tsp. of Italian seasoning

1 tsp. of parsley flakes

1/2 tsp. of salt (or more)

1 1/2 cup of shredded cheese of your choice (I used Colby and Monterey Jack)

This is such a quick, tasty and easy recipe, it just doesn’t make sense! First start by boiling your noodles and while that is taking place literally put all other ingredients (except for cheese) in a sauce pan and heat on stove with medium heat.

Once noodles are done, place them in a baking dish adding a little at a time with sauce and sprinkling shredded cheese and mix (use about 1/2 a cup of cheese). Afterwards, sprinkle remaining cup of cheese on top of noodles and bake covered for 20 min. and then without for an addition 5-10 min. Serve with garlic bread, a small salad and enjoy!

Note: I don’t really measure anything so these are all eye ball figures. Add more or less to any of the above to your tasting. 😉
