Vegan Cauliflower Fried “Chicken”

Now I have to admit, my recipe is not actually “Vegan” because I did use an egg and milk wash before frying. However, to make it “Vegan,” the original recipe I studied called for 1 1/2 tbsp. of grounded flaxseed mixed with 1/4 of water set for 3 min. then 1/4 tsp. of cayenne pepper was added with 1 tbsp. of Dijon mustard. The rest of my recipe is below. 
Ingredients: 

1 head of cauliflower 

1 cup of flour

1 tsp of season salt

1/2 tsp. of garlic salt

1 tsp. of oregano

1/2 tsp. of Cayenne pepper 

4-5 cups of extra virgin olive oil

1 bottle of your favorite buffalo or wing sauce 

2 eggs 

1 tbsp. of milk

Cut cauliflower into chicken like pieces. 

Beat eggs in a separate bowl with milk or use flaxseed alternative (you can also just coat in plain soy milk).

Lightly season chopped Cauliflower (with seasoning salt). 

Dip seasoned cauliflower one at a time in your egg and milk wash evenly coating them and then dip in flour mixture which includes all dry ingredients listed above (repeat for extra crispiness before frying). 

Fry and turn over after a few min. or until golden brown on each side like chicken.

Drain on a napkin and eat as is (kid friendly) or add a mild wing sauce to dip or coat.

Quinoa Crusted Spinach Pizza


To make the crust I used a 12 oz box of Quinoa 10 min. rice cooled, 1/4 cup of olive oil, 1 tsp. of baking powder 2/3 cups of water, 3 tsp. of Flax seeds and 1 tsp. of kosher salt. You basically blend it all together in a food processor. 

Once done, it will be gummy and you will press it out on parchment paper over a pan and brush that with olive oil. I cooked it for nearly 40-45 min. to get it like crust. I did flip it over about 25 min. in. 

For the sauce I used a 8 oz can of tomato sauce and half of a small can of tomato paste along with a few dashes of oregano, Italian seasoning a pinch of salt and garlic powder to taste. 
Once crust is ready add sauce, about 2 ounces of cheese of your choice and toppings (I did fresh Spinach and a all white cheese mix), put your pizza back in oven for about 10 min. and enjoy!

Now if you don’t get the 10 min. cooked box of Quinoa, you will have to soak the regular for 8 hours in an inch of water in refrigerator and drain. The store I went to only had the tri-color in a box so I had to alter the original recipe. 😉

Broccoli & Quinoa Medley  


Here is another one!!! Super easy, fun and healthy (in moderation lol). I found this broccoli casserole recipe on http://www.eatgood4life.com and decided to make it my own. I was truly amazed at how good and tasty this was and new you would love it! You know it’s also a plus when your toddler loves it! 👌🏾

Ingredients:

9-12 oz of broccoli (I used frozen)

2 1/2 cups of uncooked Quinoa
2 cups of Mozerella cheese

1/3 cup of Parmesan cheese

14 oz can of Swanson’s reduced sodium chicken broth

14 oz of water (I used the Swanson’s can)

3 stalks of green onions

2 cups of spinach (Again, I used frozen)

1 tsp. of oregano 

1 tsp. of garlic powder

Put frozen broccoli in a bowl and cook for about 3-4 minutes and set aside. 

Put Quinoa and chopped green onions in a 9×13 baking dish. 

Chicken broth and water mixed in bowl for taste testing (I did not add salt because the broth has enough, however you can add salt to your liking).  

Chicken broth, 1/3 cup of Parmesan cheese, spinach, garlic and oregano added to the dish and ready to bake at 350 degrees in the oven for about 30 minutes. After 30 min. You will notice the Quinoa is fully cooked and you can now stir in the broccoli and add the remainder of cheese to cover the top (I sprinkled additional Parmesan too)! Broil for about 3 minutes and voilà!
